Genmai Miso is a traditional Japanese fermented seasoning made from soybeans, brown rice and salt. It makes delicious and nutritious soups and enhances the flavour of vegetables, meat, fish dishes and dips. This Genmai miso is made in small batches and fermented naturally for 18 months. It allows the miso to go through all temperatures of the year. The end product is unpasteurised and offers the full flavour of miso.
