Miso soup is so yummy and can have amazing health benefits - but beware of the packaged products you'll find in supermarkets and at most Sushi restaurants as they are full of nasty ingredients including E-numbers, MSG and other artificial preservatives and flavour enhancers.
· Fava bean miso is a source of folate, copper, manganese, magnesium, iron, vitamin K, protein, zinc and fiber.
· The fermentation process means that miso is rich in enzymes. Fermentation enhances the number of beneficial bacteria in the food. These bacteria are known as probiotics and are thought to help a wide range of health issues, especially digestion, absorption and assimilation of nutrients.
